Recipe: Rotisserie Chicken and Cranberry Salad


Yummy Chicken & Cranberry Salad
I wanted to see what all the fuss was about with these
rotisserie chickens you can now buy at the grocery store.
So, I bought a whole plain rotisserie chicken and
decided to make me a chicken salad sandwich.
Here's the recipe that I came up with:

Ingredients:
1 whole Rotisserie Chicken
1 Cup of Craisens
1 Cup of Chopped Celery
2 Hard Boiled Eggs (chopped)
1 Green Apple (cored & diced)
1/2 Cup Mayonnaise
1 tsp. Dried Tarragon
salt n pepper to taste

Directions:
Take off all the meat off the bones and put in bowl.
I think it yielded between 3 to 4 cups of chicken.
I like both dark and white meat so I combined it all together.
Core and Dice up green apple. I used Granny Smith.
Add Craisens, Celery, Hard Boiled Eggs and apple to bowl.
Add mayonnaise and combine everything together.
Add dried tarragon.
I didn't have any fresh tarragon on hand but it would be great in this.
If you use fresh, I think a Tbl. would do ya.
Salt and Pepper to taste (about 1/4 tsp. each).

Toast some bread and slather it on
or just eat it right out of the bowl.
I think it tasted even better after it refrigerated for a bit.

Since the chicken cost me $6.99 I will probably
slow roast my own chicken at home but on occasion
it's nice to have the work done for ya.
