Frugal Recipe: Stuffed Green Peppers


Stuffed Green Peppers Dinner - $1.45 per person
Makes 6

  

Ingredients:
1.25 lbs. Ground Beef 85/15 - $4.24
6 Green Bell Peppers - $4.08
small yellow onion (chopped) - $.40
3/4 Cup uncooked rice - had in pantry
2 tsp. Worcestershire sauce - had in fridge
1 tsp. minced garlic - had in fridge
1 can diced tomatoes  - had in pantry
1 can tomato sauce - had in pantry
1 tsp. dried oregano
1 Tbl. sugar
salt n pepper - had in pantry
1 Cup Shredded Cheddar Cheese - had in fridge
1/2 Cup water - on hand



Directions:
Bring a large stock pot of salted water to a boil.
Cut off the tops of the green peppers, remove seeds.
Cook peppers in boiling water for 5 minutes.
Drain and sprinkle inside with salt.
In Large Skillet, brown beef and onions until browned.
Drain beef mixture and season with salt/pepper.
Stir in can tomatoes, rice, 1/2 cup water and Worcestershire sauce.
Cover and simmer for 15-20 minutes until rice is cooked.
Remove from heat and stir in shredded cheese.
Preheat oven to 350 degrees.
Stuff each pepper with beef & rice mixture.
Put stuffed peppers in casserole dish.
In medium size bowl, combine tomato sauce, sugar and oregano.
Pour over green peppers.
Bake covered for 25-30 minutes.
 
Total Cost: $8.72 or $1.45 per person (feeds 6)

Recipe: The Best Red Velvet Cake Ever!

Recipe from Bakerella

 
Cake Ingredients:
2 1/2 Cups All-Purpose Flour
2 Cups Sugar
1 Tbl. Cocoa
1 tsp. salt
1 tsp. baking soda
2 eggs
1 1/2 Cups Vegetable Oil
1 Cup Buttermilk
1 Tbl. White Vinegar
1 tsp. vanilla
2 oz. red food coloring (2 bottles)


Frosting Ingredients:
8 oz. cream cheese (softened)
1 cup stick butter (softenend)
1 tsp. vanilla
6 cups powdered sugar


Cake Directions:
Preheat oven to 350 degrees.
Spray 2-8inch round cake pans.
In Large Bowl, combine all wet ingredients together with wire wisk.
In another Large Bowl, combine all dry ingredients together with wire wisk.
Add wet ingredients to the dry ingredients. Mix on medium speed.
Pour evenly into cake pans.
Release any air bubbles by dropping cake pans on counter.
Bake for 30 minutes on 350.
Let Cool for 15-20 minutes.
Remove to wire racks to cool completely and cover with plastic wrap.

Frosting Directions:
Beat Cream Cheese and butter until smooth.
Add vanilla.
Add powdered sugar one cup at a time until fully incorporated.
Frost away!

Goulash Dinner: 5 people (family + inlaws)

Ingredients:

1 1/2 lb. Ground Beef 85/15 - $3.66
1 medium onion (chopped) - $.39
1 1/2 Cups Water - Free (from tap)
1 can Tomato Sauce - FREE (had in pantry)
1 can Diced Tomato - FREE (had in pantry)
1 1/2 tsp. minced garlic - FREE (had in fridge)
1 Tbl. italian seasoning - FREE (had in pantry)
1 tsp. bay leaves - FREE (had in pantry)
1 1/2 Tbl. soy sauce - Free (had in fridge)
1/2 package elbow macaroni - $.48
1 Cup Fresh Spinach - FREE (had in fridge)
salt n pepper - 1/2 Tbl each.

Directions:
In large skillet, saute ground beef over medium high heat.
Add onions and garlic. Continue to cook until beef isn't pink.
Add water, tomato sauce, tomatoes, italian seasoning,
 bay leaves, soy sauce, salt and pepper.
Stir well.
Place lid on pot and allow to cook for 20 minutes on medium to low heat.
Add elbow macaroni and return lid to pot.
Simmer for another 15-20 minutes.
Allow to cool slightly before serving.
Top with cheddar cheese and sour cream if desired.

Total Cost: $4.53 or $.91 per person

Buffalo Chicken Crescent Puffs: 3 people
Recipe adapted from Pillsbury

Ingredients:
1 can Shredded All-White Chicken - $2.00
1 can Pillsbury Crescent Rounds - $1.44
1/4 Cup Buffalo Sauce - Free (had on hand)
8 oz. softened cream cheese - $1.24
1/4 Cup Ranch Dressing - FREE (had on hand)

Directions:
Pre-heat oven to 350 degrees.
In medium bowl, combine all ingredients (except crescents).
Remove crescent rounds from package (do not separate).
Cut into 8 equal size rounds.
Spread each round to at least 3 inches wide.
Place Tbl. of mixture in center of dough round.
Wrap dough around mixture and press firmly to seal any edges.
Place on cookie sheet 2 inches apart.
Bake at 350 for 15 minutes.

Serve with crudite of veggies.

Total Cost: $4.68 or $1.56 per person

Easy & Quick Chocolatey Rolls


Super Easy & Quick Chocolately Rolls

Every Sunday, I make breakfast for my family.
I didn't have any eggs or bread to make french toast
and no flour to make pancakes.
So...
I found all of this in my fridge & pantry
and the chocolatey roll was born.
Not healthy by any means but it was so yummy and quick!
which I've done and love them!

   

Ingredients:
1 can of Pillsbury Crescent Rolls
Mini Chocolate Chips
Cocoa Powder
Butter

Directions:

Pre-heat oven to 375 degrees.
Open can of crescent rolls.
"Unroll" each crescent roll from can.
Spread each crescent roll with a layer of butter.
Sprinkle a generous layer of cocoa powder.
Sprinkle a generous layer of chocolate chips.
Roll up.
Place on greased baking sheet.

Bake at 375 for 11-13 minutes until golden brown.

Enjoy!
Warning: these are very chocolatey!

Turkey Bacon, Potato & Egg Burritos: 3 people

Ingredients:
5 Eggs (@ .09 ea.) - $.45
Flour Tortillas - FREE (in-store promotion)
1 Russet Potato - $.49
Turkey Bacon (5 slices) - Free (had on hand)
Sour Cream (topping) - Free (had on hand)
Shredded Cheddar Cheese (garnish) - Free (had on hand)

Directions:
Cook Turkey Bacon as directed on package.
While bacon is cooking, peel potato and shred potato with grater.
In medium skillet, heat 2 Tbl of vegetable oil.
Add potato and cook until golden brown.
Once potato is cooked, remove and set aside.
Scramble eggs with salt n pepper.
Cook on medium heat in same skillet.
Once cooked, add potato and crumbled bacon.
Serve with warmed flour tortillas.
Garnish with sour cream and cheese.

Total Cost: $.94 or $.31 per person (WOW!)
