Cheesy Chicken Enchilada Dinner

*This is what I made for my family and how much it cost me
Cheesy Chicken Enchilada Dinner - 3 people
Ingredients for Enchilada Sauce:
3 Tbl Vegetable Oil - Free (had on hand)
1 Tbl Flour - Free (had on hand)
1/4 Cup Chili Powder - Free (had on hand)
2 Cups Chicken Stock - Free (had on hand)
10 oz. can tomato paste - Free (had on hand)
1 tsp. Dried Oregano - Free (had on hand)
1 tsp. Dried Cumin - Free (had on hand)
1/2 tsp. Salt - Free (had on hand)
Ingredients for Enchilada Filling:
2 Cups Shredded Chicken - Free (had on hand)
1 block cream cheese - $1.24
2 green onions sliced - Free (leftover from last week)
Flour Tortillas - Free (store promotion)
Shredded Cheddar Cheese - Free (had on hand)
Directions:
In a medium saucepan heat oil on medium heat.
Add flour until smooth. Stir with Wooden Spoon.
Cook for 1 minute.
Add chili powder and cook for 30 seconds.
Add stock, tomato paste, oregano, and cumin.
Stir to combine.
Bring to a boil, reduce heat to low and cook for 15 minutes.
The sauce will thicken and smooth out.
Adjust the seasonings.
In a separate bowl, combine chicken, cream cheese and green onions.
Add 1 Cup of Enchilada Sauce to chicken/cream cheese mixture and combine.
Spoon 2 Tbls of mixture into middle of tortilla.
Roll up and place seam side down into 8x8 casserole dish.
Once pan is filled, pour remaining sauce ontop.
Top with cheddar cheese.
Bake at 350 for 20 minutes.
They are absolutely delicious!!!
