Frugal Recipe: Whole Wheat Tortellini Carbonara

During the week, I often cook Monday thru Thursday.
Since I'm a working mom,
 nothing I do takes me more than 30 minutes to prepare.
Here's a super quick recipe that I've come up with
for an easy quick dinner time meal.


Ingredients:

2 Tablespoons Italian Dressing - .10
1 1/2 Cups Chopped Cooked Chicken - $1.15
3/4 Cup 100% Fat Free Chicken Broth - .75
1 package 100% Whole Wheat Three-Cheese Tortellini - $3.30
1/2 Cup Heavy Cream or Half n Half - .35
4 slices turkey bacon, crisply cooked and crumbled - Free from Kraft First Taste
1/4 Cup Shredded Parmesan Cheese - .20

Total Cost - $5.85

Directions:

First, prepare the bacon to go into the oven.
I find that is the least amount of mess.
The last thing I want to clean up is a pile of grease.

Put the slices of turkey bacon (or regular bacon if you have it)
on a baking rack on top of a foil-lined baking sheet.
Follow package directions for bacon.
Mine cooked at 375 for 10 minutes.



While the bacon is getting crispy in the oven,
Heat a large skillet on medium heat.
Pour italian dressing into skillet to warm up.


Add your cooked chopped chicken to the skillet.
Re-heat for 3-4 minutes until slightly browned.


Next, add the chicken broth and 
the refrigerated tortellini to the skillet.
Cook uncovered for about 5-6 minutes on medium to high heat
until the tortellini have cooked through and broth has evaporated.

Add the heavy cream or half n half to the skillet.
Turn the heat down to a simmer.
Cook for another 5 minutes.

Garnish with crumbled bacon and parmesan cheese.
