Recipe: Chicken and Dumplings Soup

I've been wanting some warm you to the core soup,
so I searched for recipes in hopes to find a comforting, fullfilling meal.
 My mom made a similar version of this soup when I was little
 so I was excited to make this for my family.


Chicken and Dumplings Soup


Ingredients:

2 - boneless chicken breasts, cubed
2 carrots, peeled and sliced
2 celery stalks, sliced
1 medium yellow onion, chopped
2 - 16 oz. cans chicken broth
2 - 16 oz. cans water
1 can of Cream of Chicken
1 can of Cream of Mushroom
1 tsp. dried thyme
1/2 tsp. salt
1/4 tsp ground pepper

Dumplings:
1 1/2 Cup Flour
1/2 tsp. baking powder
6 Tbls. butter, melted
1/2 Cup Milk
1/2 tsp. salt

Directions:

In a large crockpot, add carrots, celery, and onion.
Pour in chicken broth, cream soup and seasonings.
Fill up two soup cans full of water and pour into crockpot.
Add cubed chicken.

Cover crockpot and cook on Low for 6-8 hours.
In small bowl, combine flour, baking powder and salt.
Melt 6 Tablespoons of butter and mix with 1/2 Cup Milk.
Add to flour mixture and stir until just combined.
Drop dumplings by tablespoon into hot crockpot.
Cover and cook on HIGH for 25 minutes until floating to the top.

Serves 6.

Result: SOOOOO Good!  I loved this so much that I ate on it for three days straight.
I never got tired of it. The flavor was excellent and so comforting.
Had a bad day? This soup will take care of it.
Have the sniffles? This soup will take care of that too.

Recipe: "Not From A Box" Mac N Cheese

Since I have a toddler at home and I have a full time job, I am trying to find ways to incorporate homecooked meals that don't take a lot of time. I am trying more and more to go away from processed box dinners and go towards cooking from scratch at least twice a week. So, I decided to try giving my family a homemade version of the usual box mac n cheese. Here is what I came up with:


"Not From a Box Mac N Cheese"

Ingredients:

1 box Macaroni Noodles (dry)
 Cheese Sauce:
1 stick of butter
1 2/3 C. Milk
1/4 tsp. salt
1/2 C. Shredded Cheddar Cheese
1/4 C. Pepperjack Cheese
1 tsp. Ground Dry Mustard
4 Tbsp. Flour

Directions:
Cook Macaroni Noodles as directed on the box.
I used the new Skinner "Quick Cook" Macaroni Style noodles.
 They took I think about 3 minutes to make.
 In a medium sized saucepan, melt the stick of butter over medium heat.
 Once melted, add your flour one tablespoon at a time until fully incorporated.
 Once your flour is cooked through, add your milk, salt, and dry mustard until combined.
Cook for about 5 minutes.
 Add in your shredded cheddar and pepperjack cheeses until melted into sauce. 
Cook for another 5 minutes.
Add salt and pepper to taste.

Pour sauce over macaroni noodles.
 Top with a bit more shredded cheese.

Result: The family thoroughly enjoyed it! This will become a staple in our household.

Tips: If you like it even spicier, I would add a 1/8 tsp. of cayanne pepper. (I'm not that brave)

Review: Entertaining with Mozaik Makes it Easy


This is my most favorite product that I've reviewed yet!  It's called "Mozaik" and I am in love! I love to host parties and have guests over quite often for dinner. I don't always want to use my normal dinnerware so having an affordable option for dishware is right up my ally!
