Goulash Dinner: 5 people (family + inlaws)

Ingredients:

1 1/2 lb. Ground Beef 85/15 - $3.66
1 medium onion (chopped) - $.39
1 1/2 Cups Water - Free (from tap)
1 can Tomato Sauce - FREE (had in pantry)
1 can Diced Tomato - FREE (had in pantry)
1 1/2 tsp. minced garlic - FREE (had in fridge)
1 Tbl. italian seasoning - FREE (had in pantry)
1 tsp. bay leaves - FREE (had in pantry)
1 1/2 Tbl. soy sauce - Free (had in fridge)
1/2 package elbow macaroni - $.48
1 Cup Fresh Spinach - FREE (had in fridge)
salt n pepper - 1/2 Tbl each.

Directions:
In large skillet, saute ground beef over medium high heat.
Add onions and garlic. Continue to cook until beef isn't pink.
Add water, tomato sauce, tomatoes, italian seasoning,
 bay leaves, soy sauce, salt and pepper.
Stir well.
Place lid on pot and allow to cook for 20 minutes on medium to low heat.
Add elbow macaroni and return lid to pot.
Simmer for another 15-20 minutes.
Allow to cool slightly before serving.
Top with cheddar cheese and sour cream if desired.

Total Cost: $4.53 or $.91 per person

Buffalo Chicken Crescent Puffs: 3 people
Recipe adapted from Pillsbury

Ingredients:
1 can Shredded All-White Chicken - $2.00
1 can Pillsbury Crescent Rounds - $1.44
1/4 Cup Buffalo Sauce - Free (had on hand)
8 oz. softened cream cheese - $1.24
1/4 Cup Ranch Dressing - FREE (had on hand)

Directions:
Pre-heat oven to 350 degrees.
In medium bowl, combine all ingredients (except crescents).
Remove crescent rounds from package (do not separate).
Cut into 8 equal size rounds.
Spread each round to at least 3 inches wide.
Place Tbl. of mixture in center of dough round.
Wrap dough around mixture and press firmly to seal any edges.
Place on cookie sheet 2 inches apart.
Bake at 350 for 15 minutes.

Serve with crudite of veggies.

Total Cost: $4.68 or $1.56 per person

Turkey Bacon, Potato & Egg Burritos: 3 people

Ingredients:
5 Eggs (@ .09 ea.) - $.45
Flour Tortillas - FREE (in-store promotion)
1 Russet Potato - $.49
Turkey Bacon (5 slices) - Free (had on hand)
Sour Cream (topping) - Free (had on hand)
Shredded Cheddar Cheese (garnish) - Free (had on hand)

Directions:
Cook Turkey Bacon as directed on package.
While bacon is cooking, peel potato and shred potato with grater.
In medium skillet, heat 2 Tbl of vegetable oil.
Add potato and cook until golden brown.
Once potato is cooked, remove and set aside.
Scramble eggs with salt n pepper.
Cook on medium heat in same skillet.
Once cooked, add potato and crumbled bacon.
Serve with warmed flour tortillas.
Garnish with sour cream and cheese.

Total Cost: $.94 or $.31 per person (WOW!)

Recipe and Cost Breakdown

Chicken Tetrazzini: 3 people

Ingredients:
2 Cups Cooked Chicken - Free (had on hand)
1/2 lb. thin spagetti - Free (had on hand)
1 Tbl. butter - Free (had on hand)
 1/2 Cup Heavy Cream - $.70
1 Can Cream of Chicken - Free (had on hand)
1/2 Cup Sour Cream - Free (had on hand)
1 medium carrot - $.32
1 medium zucchini squash - $.92
1 Tbl. minced garlic - Free (had on hand)
1/2 Cup Shredded Parmesean cheese - Free (had on hand)
salt n pepper to taste - Free (had on hand)

Directions:
Cook noodles according to package.
While the noodles are cooking, heat large skillet on medium heat.
Add butter to skillet and cook until melted.
Add the garlic, shredded carrot and shredded zucchini to pan.
Saute for 3-5 minutes.
Add soup, sour cream and heavy cream to pan until combined.
Add chicken and parm cheese.
Cook over low heat for another 5 minutes.
Drain noodles and add to pan and toss.
Top with additional parm cheese for garnish.

Recipe and Cost Breakdown

Tostadas and Apple Dumplings: 3 people

Tostadas - (Taco Bueno) - $3.21 (used coupons)

Ingredients for Apple Dumplings (makes 6):
1 Granny Smith Apple - $.61
1 pkg. of Crescent Rolls - $1.44
1 stick of butter - $.62
1 tsp. of vanilla - Free (had on hand)
3/4 cup of Sugar - Free (had on hand)
Sprinkle of Cinnamon - Free (had on hand)

Directions:
Pre-heat oven to 350.
Peel and Core granny smith apple.
Cut into wedges (should make 6).
Open can of crescent rolls and unfold dough.
Wrap a crescent roll around each apple wedge.
Place into 8x8 casserole dish.
In saucepan on medium heat, melt stick of butter.
Add sugar and vanilla until melted together.
Pour over dumplings in casserole dish.
Sprinkle with cinnamon.
Bake at 350 for 30 minutes or until browned.

Spinach Chef Salad w/ Warm Vinaigrette

Ingredients:
Bag of Spinach - $2.50
2 Hard Boiled Eggs (@ .09 ea.) - $.18
Shredded Cheese - Free (had on hand)
6 slices Chicken Breast Deli Meat (1/4 of pkg.) - $.72
1/2 pkg. Turkey Bacon - $1.27

1/2 Tbl. minced garlic - FREE (had on hand)
1/4 Cup Extra Virgin Olive Oil - Free (had on hand)
5 Tbl. Red Wine Vinegar - $.10
2 tsp. honey - Free (had on hand)
1 tsp. dijon mustard - Free (had on hand)
salt n pepper to taste - Free (had on hand)

Vinaigrette Directions:
In a large skillet over medium heat, cook bacon until crisp.
 Remove with a slotted spoon to a paper towel-lined plate to drain.
 Discard all but 2 Tbsp. bacon fat.
 When bacon is cool enough to handle, crumble.

Just before serving, reheat bacon fat over medium-low heat.
 Add garlic and cook, stirring, until soft, 2 to 3 minutes.
Pour into a bowl and vigorously whisk in olive oil, vinegar, honey and mustard.
 Season with salt and pepper.

Ingredients:
1 lb. Ground Sirloin 90/10 - $3.76
1/2 yellow onion chopped - $.21
1/2 Tbl. Minced Garlic - FREE (had on hand)
3 Tbl. Tomato Paste - FREE (had on hand)
1 can Tomato Sauce - FREE (had on hand)
1/4 Cup Brown Sugar - FREE (had on hand)
3 Tbl. Worcestershire Sauce - FREE (had on hand)
1 tsp. Steak Seasoning - Free (had on hand)
1 tsp. Garlic Powder - FREE (had on hand)
Pinch of Salt n Pepper - FREE (had on hand)
1 Red Pell Pepper Chopped - $1.78
Shredded Mild Cheddar Cheese - FREE (had on hand)
1 pkg. Hawaiin Rolls - $1.49

Directions:
Cook Garlic and Onion until softened.
Add Ground Beef and cook until browned. Drain.
Add drained ground beef, garlic and onion mixture back into pan.
Add chopped red bell pepper.
Add brown sugar and spices to pan. Cook for 1 minute.
Add Worcestershire Sauce, Tomato Sauce and Tomato Paste to pan.
Cook for about 10 minutes on medium heat.
Adjust seasinings to taste.
Serve on toasted buns and garnish with cheddar cheese.

Cost: $7.24 or $2.41 per person

Chicken Sliders, Potato Salad & Coleslaw Dinner: 5 people

Ingredients for Chicken Sliders:
Hawaiin Bread - $1.49
Chicken Breasts - $2.50
Sliced Cheese - Free (store promotion)

Ingredients for Potato Salad:
2 Large Russet Potatoes - $.98
1 Cup Mayonaise - Free (store promotion)
1/4 Cup Yellow Mustard - Free (had on hand)
2 Hard Boiled Eggs (.09c each) - $.18
1 Large Dill Pickle (chopped) - Free (had on hand)
2 Tbl of Dill Pickle Juice - Free (used from pickle jar)
1/4 Cup Minced Yellow Onion - Free (had on hand)
1/4 tsp dry mustard - Free (had on hand)
1/2 tsp. celery seed - (Free (had on hand)
1/2 tsp. paparika - Free (had on hand)
salt and pepper to taste

Directions for Melissa's Potato Salad:
Peel and Dice 2 Large Russet Potatoes.
Put potatoes in large stockpot.
Cover with cold water.
Bring water to boil.
Cook for 7-10 minutes or until potatoes are fork tender.
Drain potatoes and put in large bowl.
Add all other ingredients and mix together.
Refrigerate for at least an hour.
Best if served cold.

Ingredients for Creamy Coleslaw Recipe:
1/2 Bag of Coleslaw Mix - Free (had on hand from Week 1)
3/4 Cup Mayo - Free (store promotion)
2 Tbl Sour Cream - Free (had on hand)
2 Tbl Grated Yellow Onion - Free (had on hand)
2 Tbl Sugar - Free (had on hand)
2 Tbl White Vinegar - Free (had on hand)
1 Tbl Dry Mustard - Free (had on hand)
2 tsp. salt (Free (had on hand)

also grilled out Hot Dogs for the boys:
Hot Dogs - $1.00
Hot Dog Buns - $.98

Total Cost: $1.43 per person (WOW!)

Cheesy Chicken Enchilada Dinner

Cheesy Chicken Enchilada Dinner - 3 people

Ingredients for Enchilada Sauce:
3 Tbl Vegetable Oil - Free (had on hand)
1 Tbl Flour - Free (had on hand)
1/4 Cup Chili Powder - Free (had on hand)
2 Cups Chicken Stock - Free (had on hand)
10 oz. can tomato paste - Free (had on hand)
1 tsp. Dried Oregano - Free (had on hand)
1 tsp. Dried Cumin - Free (had on hand)
1/2 tsp. Salt - Free (had on hand)

Ingredients for Enchilada Filling:
2 Cups Shredded Chicken - Free (had on hand)
1 block cream cheese - $1.24
2 green onions sliced - Free (leftover from last week)
Flour Tortillas - Free (store promotion)
Shredded Cheddar Cheese - Free (had on hand)

Directions:
In a medium saucepan heat oil on medium heat.
Add flour until smooth. Stir with Wooden Spoon.
 Cook for 1 minute.
 Add chili powder and cook for 30 seconds.
 Add stock, tomato paste, oregano, and cumin.
 Stir to combine.
 Bring to a boil, reduce heat to low and cook for 15 minutes.
 The sauce will thicken and smooth out.
 Adjust the seasonings.
In a separate bowl, combine chicken, cream cheese and green onions.
Add 1 Cup of Enchilada Sauce to chicken/cream cheese mixture and combine.
Spoon 2 Tbls of mixture into middle of tortilla.
Roll up and place seam side down into 8x8 casserole dish.
Once pan is filled, pour remaining sauce ontop.
Top with cheddar cheese.
 Bake at 350 for 20 minutes.

They are absolutely delicious!!!
