My 23 month old son absolutely loved every single thing that EcoMom had sent. As a mom, I loved the fact that the Sammy's are filled with organic fruit spread and that they do not have Trans Fats or contain high fructose corn syrup. I also loved that all the products were packaged to "grab-n-go" which allowed me to give my son some treats in the car while we were on a recent trip.  The Mashups container was super easy for my son to hold and he loved feeding himself. We will definitely be getting more of these to have in the diaper bag and to keep in the pantry for snacktime.

Recipe: Rotisserie Chicken and Cranberry Salad


Yummy Chicken & Cranberry Salad
I wanted to see what all the fuss was about with these
rotisserie chickens you can now buy at the grocery store.
So, I bought a whole plain rotisserie chicken and
decided to make me a chicken salad sandwich.
Here's the recipe that I came up with:

Ingredients:
1 whole Rotisserie Chicken
1 Cup of Craisens
1 Cup of Chopped Celery
2 Hard Boiled Eggs (chopped)
1 Green Apple (cored & diced)
1/2 Cup Mayonnaise
1 tsp. Dried Tarragon
salt n pepper to taste

Directions:
Take off all the meat off the bones and put in bowl.
I think it yielded between 3 to 4 cups of chicken.
I like both dark and white meat so I combined it all together.
Core and Dice up green apple. I used Granny Smith.
Add Craisens, Celery, Hard Boiled Eggs and apple to bowl.
Add mayonnaise and combine everything together.
Add dried tarragon.
I didn't have any fresh tarragon on hand but it would be great in this.
If you use fresh, I think a Tbl. would do ya.
Salt and Pepper to taste (about 1/4 tsp. each).

Toast some bread and slather it on
or just eat it right out of the bowl.
I think it tasted even better after it refrigerated for a bit.

Since the chicken cost me $6.99 I will probably
slow roast my own chicken at home but on occasion
it's nice to have the work done for ya.

SodaStream Review: I Made Homemade Soda!


The generous people at SodaStream USA provided me my very own soda making machine so that I can tell you all about the amazing benefits and features it provides.

How Does It Work?
Well, it's super easy!  All you have to do is take it out of the box, screw in the carbonator, fill the bottle up with tap water, add your favorite sodamix flavor, screw in the bottle and push a button for carbonation! In a matter of seconds, your soda is ready to drink! So far, we've tried Cola, Orange Mango, Root Beer, Lemonade, Energy Drink and Orange Essence. My family loves all types of soda and so far our favorites seem to be the Lemonade and Orange Mango.  I loved how you can customize how much carbonation goes into the bottle! My husband likes a little carbonation and I like a lot so it was nice to make our own bottle of soda.

There were so many benefits to making your own soda at home:

1. You can customize the carbonation and soda flavor to your taste.
2. You don't have to buy bottled water or can soda anymore - saving you money and the environment!
3. One sodamix bottle makes 33 cans of soda!
4. The Soda Fountain Jet doesn't use electricity or batteries.
5. One carbonator makes 60 liters of soda or 170 cans of soda!
6. There are over 30 great tasting flavors to choose from.
7. The Fountain Jet saves on space.  It's smaller than my blender.
8. The Sodamix Regular Flavors do not contain high fructose corn syrup!
9. Costs only 25cents a serving!
10. You can have fresh-tasting soda in seconds!
